Quick and Easy Beef Chili

Ingredients
  

  • 2 tbsp olive oil
  • 1 pound 90% lean ground beef
  • 1 small red onion, diced
  • 1 clove garlic minced
  • 1 bell pepper, diced
  • 3/4 tsp kosher salt
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 28oz can crushed tomatoes
  • 1 15 oz can red kidney beans, rinsed and drained
  • 1 15 oz can pinto beans, rinsed and drained
  • 1 cup water or broth
  • Suggested toppings: shredded cheese, sour cream, tortilla chips, cilantro, green onions

Instructions
 

  • In a large pot over medium heat add oil, followed by ground beef; cook until browned.
  • Add onion and garlic and sauté for 2 to 3 minutes. Add peppers, salt and spices and cook for 2 to 3 minutes more. Stir in crushed tomatoes, beans and water or broth and cook, uncovered, over medium heat for at least 30 minutes, stirring occasionally. Serve in bowls with desired toppings.
