Ingredients
  

  • 2 cup quick oats
  • 1/3 cup creamy peanut butter
  • 1/4 cup honey
  • 1/4 cup canned pumpkin or unsweetened applesauce
  • 1/4 cup pumpkin seeds
  • 1/3 cup shredded coconut flakes
  • 1/2 tsp ground cinnamon
  • 1/2 tsp kosher salt salt
  • 1/3 cup mini M&Ms

Instructions
 

  • Place oats, peanut butter, honey, pumpkin, pumpkin seeds, coconut, cinnamon and salt in a food processor and pulse until well combined. Taste and adjust as desired; the mixture should be slightly sticky and will hold together.
  • Transfer to a large bowl and gently mix in the M&Ms.
  • Using clean hands, roll mixture into evenly-sized balls and transfer to a container lined with parchment paper.
  • Enjoy right away or store in the refrigerator for up to 5 days.
  • Note: If you don't have a food processor, you can use a blender but will need to mix a few times in between blending until combined. If the consistency is more crumbly, add more pumpkin or peanut butter as needed.
