Ingredients
- 2 tbsp olive oil
- 1 pound 90% lean ground beef
- 1 small red onion, diced
- 1 clove garlic minced
- 1 bell pepper, diced
- 3/4 tsp kosher salt
- 1 tsp chili powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 28oz can crushed tomatoes
- 1 15 oz can red kidney beans, rinsed and drained
- 1 15 oz can pinto beans, rinsed and drained
- 1 cup water or broth
- Suggested toppings: shredded cheese, sour cream, tortilla chips, cilantro, green onions
Instructions
- In a large pot over medium heat add oil, followed by ground beef; cook until browned.
- Add onion and garlic and sauté for 2 to 3 minutes. Add peppers, salt and spices and cook for 2 to 3 minutes more. Stir in crushed tomatoes, beans and water or broth and cook, uncovered, over medium heat for at least 30 minutes, stirring occasionally. Serve in bowls with desired toppings.
