Pumpkin Chocolate Energy Bites

Equipment
- Food Processor (or see note below)
Ingredients
- 2 cups rolled oats
- 1/4 cup honey
- 1/4 cup peanut butter
- 1/4 cup canned pumpkin
- 1/4 cup chocolate chips
- 1/4 cup pumpkin seeds
- 1/2 tsp cinnamon
- 1/4 tsp kosher salt
Instructions
- Place ingredients in a food processor and pulse until well combined, adding more oats or pumpkin if needed to reach proper consistency.
- Transfer mixture to a large bowl. Scoop out even portions with a spoon and with clean hands roll into balls.
- Enjoy immediately or store in a container in the refrigerator for up to 5 days.
- NOTE: If you don’t have a food processor, pulse the dry oats in a blender and then mix ingredients in a large bowl. The consistency will change slightly so add a little more pumpkin or oats if needed.
