Place ingredients in a food processor and pulse until well combined, adding more oats or pumpkin if needed to reach proper consistency.
Transfer mixture to a large bowl. Scoop out even portions with a spoon and with clean hands roll into balls.
Enjoy immediately or store in a container in the refrigerator for up to 5 days.
NOTE: If you don’t have a food processor, pulse the dry oats in a blender and then mix ingredients in a large bowl. The consistency will change slightly so add a little more pumpkin or oats if needed.
