Egg + Sweet Potato Breakfast Skillet

Ingredients
  

  • 2 tsp olive oil
  • 1 cup shredded sweet potato
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/2 cup diced red onion
  • 1/2 cup diced green bell pepper
  • 2 tbsp shredded cheese
  • 2 large eggs any style

Instructions
 

  • Heat oil in a medium skillet over medium heat. Add sweet potato, season with salt and pepper and cook until slightly crispy, about 5 minutes.
  • Add onion and pepper and sautee for 2 to 3 minutes more.
  • Add eggs to pan and cook until set. Flip or scramble and sprinkle with cheese.
  • Once cheese is melted and eggs are cooked as desired, transfer to a plate and serve.
