Rhubarb Syrup

Makes ¾ cup

3 cups fresh rhubarb, trimmed and chopped
¾ cup granulated sugar
Juice of one lemon

Combine ingredients in a small saucepan. Bring to a boil, reduce heat and simmer for 10 minutes until sugar is melted. Using a rubber spatula, run the mixture through a fine mesh strainer to remove the pulp, you will be left with a thick and bright pink syrup.
