Egg + Sweet Potato Breakfast Skillet

Ingredients
- 2 tsp olive oil
- 1 cup shredded sweet potato
- 1/4 tsp kosher salt
- 1/4 tsp black pepper
- 1/2 cup diced red onion
- 1/2 cup diced green bell pepper
- 2 tbsp shredded cheese
- 2 large eggs any style
Instructions
- Heat oil in a medium skillet over medium heat. Add sweet potato, season with salt and pepper and cook until slightly crispy, about 5 minutes.
- Add onion and pepper and sautee for 2 to 3 minutes more.
- Add eggs to pan and cook until set. Flip or scramble and sprinkle with cheese.
- Once cheese is melted and eggs are cooked as desired, transfer to a plate and serve.
