But not just any chips and dip, Beet Chips and Goat Cheese Guacamole. Revel in the salty, crisp beet as it scoops up tangy yet refreshing guacamole for a home run nosh.
Beet Chips
2 large beets (or 3 cups) (sliced 1/16th inch thick by mandolin)
Salt and pepper
Preheat oven to 350F. Slice beets and sprinkle with salt and pepper to taste. On a greased baking sheet, place beets in a single layer and bake 20 -25 minutes (in middle rack), flipping halfway through. You want them crispy, but not burnt. Let cool.
Goat Cheese Guacamole
2 medium avocado
Juice of 2 lime
½ yellow onion, diced
2 cloves garlic, minced
1/3 cup chopped cilantro
1 small jalapeño, diced
2 tablespoon chopped tomato
1/3 cup soft goat cheese
Salt and pepper
Mash avocado in a bowl and add lime juice. Stir in onion through goat cheese until combined. Season with salt and pepper.
