Summer Entertaining Fiesta: Taco Salad

With the weather getting warmer and the days longer, BBQs and outdoor entertaining will soon be to a summertime staple. A spicy “fiesta night” is an easy way to add a twist to the traditional summer entertaining meal.

While the classics like nachos, enchiladas, or burritos are delicious,  they can be high in added fat, sodium, and empty calories—particularly if ingredients are deep-fried, covered in cheese, or wrapped in refined-grain tortillas. The keys to a healthier Fiesta include tweaking the cooking method or portion sizes, and getting creative in the kitchen.

This recipe features all the ingredients we love—protein, beans, corn, and bell peppers—over a bed of seasonal greens. It’s packed with flavor from fresh chopped cilantro and spices like cumin and chili powder. Make extra! This dinner makes for fabulous leftovers to bring to work or pack into school lunches.
