Strawberry Rhubarb Margaritas

Celebrate happy hour and World Cocktail Day with this gorgeous and seasonal drink. Make the rhubarb syrup ahead and keep chilled in the refrigerator. You can also make a large batch in a pitcher to serve to a crowd.

Strawberry Rhubarb Margaritas

Makes 1 cocktail

1 tablespoon fresh cilantro
Diced strawberries
Ice
Rhubarb Syrup
1.5 ounces silver tequila
1 ounce Triple Sec
Blood Orange or Lemon Soda (San Pelligrino recommended)
Fresh lime juice

Salt rimmed glass
Lime wedges for serving

Place cilantro and strawberries in the bottom of a tall glass and muddle gently. Add ice, rhubarb syrup, tequila, Triple Sec, a splash of soda and a squeeze of fresh lime; stir or shake.
Pour into a salt rimmed glass and serve with a lime wedge.
