Raspberry Vinaigrette

 

Makes 16 Servings

Ingredients:
2 tablespoons freshly squeezed lemon juice
2 tablespoons red wine vinegar
1 teaspoon Dijon mustard
1 tablespoon chopped scallion
2 teaspoons raspberry jam
Pinch kosher salt
Freshly ground black pepper to taste
1⁄2 cup extra virgin olive oil
1/2 cup fresh raspberries

Directions:
In a medium bowl combine lemon juice, vinegar, mustard, scallion and preserves.  Season with salt and pepper and whisk to combine. Slowly whisk in olive oil. When all of the oil is incorporated, mix in fresh raspberries.
