Air Fryer Recipe: BBQ Wontons

An order of fried wontons from a local Chinese joint can easily top 500 calories and it’s supposed to be an appetizer! Here’s a fabulous way to repurpose leftover chicken and veggies; a few unexpected ingredients make these bite-sized snacks extra special.

BBQ Wontons

(Makes: 20 pieces)

2 tbsp. grated carrots
2 tbsp. grated zucchini
¼ cup diced cooked chicken
1 tbsp pickled jalapenos, finely chopped
3 tbsp. cream cheese, softened
2 tsp. barbecue sauce
20 wonton wrappers
1 tbsp canola oil

Preheat the air fryer to 390°F.
Wrap the grated carrots and zucchini in a paper towel and squeeze out excess liquid.
In a large bowl, combine the carrots, zucchini, chicken, jalapenos, cream cheese and barbecue sauce.
 Place a tablespoon of the filling in the center of the wonton wrapper. Apply a small amount of water along the edges of the wrapper to help seal it, then fold in a triangle. If the wrappers are coated with flour, place the filling on the floured side)
Repeat the process with the remaining wontons and place on a plate, covering with a damp paper towel. Before cooking brush each with canola oil.
Spray the air fryer baking pan with nonstick cooking spray, then place 5 wontons in the pan and cook for 4 minutes, or until golden brown. Reapeat this process with the remaining wontons.
Remove the wontons from the fryer and allow to cool on a wire rack for 5 minutes before serving.

Healthy Air Fryer Cookbook: Cauliflower and Cheddar Potato Skins

This popular pub food can be made in a healthier fashion. Pile on the cauliflower, sprinkle with a sensible amount of flavorful cheese and get the skin nice and crispy skin in the air fryer.

Makes 8 pieces

4 medium russet potatoes, scrubbed
2 tbsp olive oil
½ tsp kosher salt
½ tsp black pepper
½ cup shredded sharp cheddar cheese
1 cup chopped cauliflower florets
2 tbsp. chopped chives for serving

    1.    Preheat the air fryer to 360°F
    2.    Spray the fryer basket with nonstick cooking spray and place 2 whole potatoes in the air fryer basket and cook until tender, about 20 minutes; repeat with remaining potatoes.
    3.    Once potatoes are cool enough to handle, cut in half lengthwise and scoop out some of the flesh.
    4.    Brush the insides of the potato skins with olive oil and season with salt and pepper.
    5.    Top each potato skin with 2 tbsp of cauliflower and 1 tbsp of shredded cheese.
 6. Place four pieces in the fryer basket and cook for 12 minutes. Repeat with remaining 4 pieces.
 7. Sprinkle with chives before serving.

Healthy Air Fryer Cookbook: Zeppole with Cannoli Dip

One of my absolute favorite recipes from my new cookbook. Make the batter and dip ahead of time and store in the refrigerator. Cook the zeppole just before dessert. Serve with espresso and fresh fruit.

Serves 8

½ cup all-purpose flour
1 ¼ tsp. baking powder
2 tbsp. granulated sugar
Pinch kosher salt
¾ cup whole milk ricotta cheese
1 egg, beaten
Vanilla extract
2 tbsp. Greek vanilla yogurt
1 tbsp. mini chocolate chips
1 tsp. confectioners’ sugar

1. Preheat air fryer to 390°F.
2. In a medium bowl, whisk flour, baking powder, sugar and salt. Add ½ cup ricotta cheese, egg and ¼ tsp vanilla extract and mix well to form a thick batter.  
3. Spray the air fryer basket with nonstick spray. Place 8 spoonfuls of batter into the fryer basket and cook for 5 minutes, until puffed and golden. Remove from fryer basket with tongs and repeat with remaining batter.
4. In a small bowl combine remaining ¼ cup ricotta cheese with yogurt, ¼ tsp. vanilla extract and chocolate chips; mix well.
5. Dust zeppole with confectioners’ sugar and serve with dip.

Healthy Air Fryer Cookbook: Raspberry Yogurt Cake

Antioxidant-rich raspberries are underutilized in breads and muffins, the subtle sweetness mixes beautifully with the tang of vanilla yogurt in this breakfast cake.

Serves 4

½ cup whole wheat pastry flour
1/8 tsp. kosher salt
¼ tsp. baking powder
½ cup whole milk vanilla yogurt
2 tbsp. canola oil
2 tbsp. maple syrup
¾ cup fresh raspberries
Confectioners’ sugar for serving

Preheat air fryer to 300°F; spray baking pan with nonstick cooking spray.
In a bowl combine flour, salt and baking powder; mix well.
Mix in yogurt, canola oil and maple syrup, then gently fold in raspberries.
Pour batter into prepared pan and cook for 8 minutes. Allow to cool for 10 minutes in the pan. Sift confectioners’ sugar over the top before serving.
