Ginger Shrimp with Carrots + Snap Peas

A cozy vegetarian meal for a snowy night. Lentil dal (made in @instantpotofficial) - recipe below

With rice, cilantro, wheat pita and plenty of tzatziki!

Instant Pot Lentil Dal

* 1 cup green lentils, rinsed (check for any tiny stones and discard)

* 1/2 cup chopped onion

* 1 tbsp spicy curry powder

* 2 cloves garlic, minced

* 2 tsp finely chopped fresh ginger

* 1 cup marinara sauce
(I used @otamot)

* 3/4 tsp kosher salt

* ½ cup canned coconut milk

1) Combine lentils, onion, curry powder, garlic, ginger, tomato sauce and 1 ½ cups water in the inner post. Stir to combine.

2) Cover, lock lid and cook on high pressure for 15 minutes.

3) Quick release the pressure. Remove the lid, and stir in salt and coconut milk.

Serve hot :))
