1) fresh tomatoes & basil atop mac & cheese
2) make “noodles” out of julienned summer squash
3) baked omelet cups with whatever’s in the fridge – broccoli, spinach …..
4) roast and puree (here are tomatoes, peppers, onion, garlic & oregano) serve with chicken, fish, pasta or crusty bread
5) my go-to – PIZZA – yes, there’s turkey pepperoni on here but also peppers, olives & tomato
