Lentils are Legumes to Love! This simple recipe is ready in the @instantpotofficial in about 20 minutes!

Lentil Dal from DASH Diet Meal Prep for Beginners Cookbook

1 cup green lentils
1/2 cup chopped onion or shallot
1 tbsp curry powder
2 garlic cloves, roughly chopped
1 tsp grated ginger
8 oz canned tomato sauce or marinara sauce
1 1/2 cups water
1/2 tsp kosher salt
1/2 cup canned coconut milk
Chopped fresh cilantro

1) In an electric pressure cooker, combine lentils, onion or shallot, curry powder, garlic, ginger, tomato sauce and water. Stir to combine

2) Cook on high pressure for 15 minutes. Quick-release the pressure. Remove the lid and stir in the salt and coconut milk.

3) Serve topped with fresh cilantro over rice or with naan bread.
