Gluten Free for Grandma: XMAS Eve Menu

Making cookies for Santa on xmas eve has become a family tradition. My mother-in-law was recently diagnosed with Celiac Disease so this year’s festivities call for a gluten free menu. No problem!

Appetizers
GF Chicken Fingers with Chili Mayo and Honey Mustard Dipping Sauces
Shrimp-Pineapple Skewers*

Main Course
Mustard Roasted Salmon
Brown Rice Pasta with Arugula Pesto
Sauteed Green Beans

Dessert
Gluten Free Sugar Cookies (King Arthur has a great recipe on box of GF Baking Mix)
Hot White Chocolate with Amaretto

*Gluten free variation for teriyaki sauce – wheat free tamari in a sauce pan with brown sugar, fresh grated ginger and minced garlic – simmer until brown sugar is melted and sauce is reduced slightly
