diced red onion

Instructions
Heat oil in a medium skillet over medium heat. Add sweet potato, season with salt and pepper and cook until slightly crispy, about 5 minutes.
Add onion and pepper and sautee for 2 to 3 minutes more.
Add eggs to pan and cook until set. Flip or scramble and sprinkle with cheese.
Once cheese is melted and eggs are cooked as desired, transfer to a plate and serve.
