Pumpkin Chocolate Energy Bites

A DIY snack that checks all the boxes – healthy, easy and made with affordable pantry staples.

Toss all the ingredients (minus the chocolate) into the food processor, roll, chill and enjoy.

Pumpkin Chocolate Energy Bites

Equipment

  • Food Processor (or see note below)

Ingredients
  

  • 2 cups rolled oats
  • 1/4 cup honey
  • 1/4 cup peanut butter
  • 1/4 cup canned pumpkin
  • 1/4 cup chocolate chips
  • 1/4 cup pumpkin seeds
  • 1/2 tsp cinnamon
  • 1/4 tsp kosher salt

Instructions
 

  • Place ingredients in a food processor and pulse until well combined, adding more oats or pumpkin if needed to reach proper consistency.
  • Transfer mixture to a large bowl. Scoop out even portions with a spoon and with clean hands roll into balls.
  • Enjoy immediately or store in a container in the refrigerator for up to 5 days.
  • NOTE: If you don’t have a food processor, pulse the dry oats in a blender and then mix ingredients in a large bowl. The consistency will change slightly so add a little more pumpkin or oats if needed.
