Greek Turkey Meatballs

A quick and easy answer for what to make (other than meatloaf and burgers) with ground turkey. Serve with pasta, salad, rice or tuck into pita bread with some homemade tzatziki.

1 pound lean ground turkey

1 egg

2 tsp dried oregano

3/4 cup panko breadcrumbs

3/4 cup crumbled feta

1/2 finely chopped red bell pepper

Kosher salt

Black pepper

Preheat oven to 400F

Combine all ingredients in a bowl and using clean hands, mix and roll into 16 (1 oz) balls. Place on a parchment lined baking sheet and bake until internal temp is 165F (use a 🌡!!) – should take about 18-20min
